I've gotten so many requests for recipes so I decided to finally shoot one & get it up for you all! I chose to start this little recipe series with an easy week night dinner. I don't know about you but when I get home from work I'm usually exhausted so I love to have something simple & delicious for dinner.
Ingredients //
-Pita Pockets (white or whole wheat)
- Cucumber
-Roma Tomato
-Spinach
-Red Onion (optional)
-1 lb Boneless Skinless Chicken Breast
- Crumbled Feta
-Kalamata Olives
-Creamy Greek Dressing
Instructions //
- Dice chicken & cook over medium heat until fully cooked- I seasoned my chicken with a little salt & pepper
- Dice cucumber & tomato
- Cut open pita pocket & fill with a handful of spinach
- Add in the cucumber & tomato
- Add chicken into pita pocket
- Top with crumbled feta, olives & a drizzle of dressing! The dressing pictured was so delicious- I highly recommend trying it!
* I served these pita pockets with some sweet potato fries. I can't wait to make these again- even Kyle loved them! Let me know if you have any questions!

Nicholle
